Avocado Walnut Cream Cheese Sandwich  Back to Recipes

Try Avocado and Walnut Sandwiches for an indulgent yet fresh Pinot Grigio pairing. Makes 12.



Ingredients
  • 5 ounces walnut cream cheese, softened
  • 1/3 cup finely chopped walnut halves
  • 1 ripe avocado, pitted and sliced (1/4-inch thick slices)
  • ½ cup alfalfa sprouts, packed
  • ½ cup thinly sliced carrots
  • black pepper and salt, to taste
  • 6 slices whole wheat bread, without crusts

 


Directions

In a small bowl, combine walnut cream cheese cream cheese, finely chopped walnuts and salt and pepper. Mix until thoroughly combined.

Using a butter knife, spread cream cheese mixture evenly on one side of each slice of crust-less whole wheat bread. Alternate avocado and carrot slices on cream cheese, slightly overlapping each other until covered. Repeat for half of the slices of bread. Divide alfalfa sprouts into three equal amounts and nest on top of carrot and avocado covered slices of bread. Match the slices of bread with just cream cheese to the slices of bread with avocados and carrots. Make 3 whole sandwiches.

With a sharp knife, cut each sandwich into four sections on the diagonal. This creates four mini triangle sandwiches from each whole sandwich. You will have twelve mini triangle sandwiches total. Pack for your picnic and serve with Ecco Domani wine.
