Baked Quinoa With Feta And Peppers  Back to Recipes

  • 1 ½ cups quinoa (dry)
  • 1 cup black olives, chopped
  • 14-oz can black beans, drained
  • 1 large red bell pepper, seeded and diced
  • 1 large white onion, chopped
  • 1 teaspoon garlic, minced
  • 8 ounces feta cheese, cubed or crumbled
  • Salt and pepper, to taste
  • Chicken stock (to substitute for water when cooking quinoa)
  • Juice of 1 Lime


Preheat oven to 400 degrees. Add olive oil to coat the bottom of a ceramic baking pan. Add onion, bell pepper, salt and pepper to the pan and toss in oil. Cook vegetables in oven for 15 minutes. Add garlic to vegetables in the pan and stir then cook for 5 more minutes.

Meanwhile, cook quinoa according to package – except replace water with chicken stock. When quinoa is done, add drained black beans and olives to saucepan and toss with quinoa. Squeeze the juice of 1 lime over quinoa and black bean mixture.

Spread the quinoa mixture over roasted vegetables and garlic in pan and sprinkle feta over the top. Bake for 15-20 more minutes until lightly browned on top. Enjoy with Ecco Domani wine.
