Blueberry Chutney Ricotta Crostini  Back to Recipes

A trip to the farmer’s market inspired our Blueberry Chutney Ricotta Crostini recipe. Fresh-picked blueberries, local ricotta and bakery French bread complement the refreshing flavor notes in Ecco Domani Pinot Grigio.

  • ½ cup white onion, chopped coarsely
  • extra virgin olive oil
  • 1 cup blueberries
  • 2 tablespoons ginger, freshly grated
  • ¼ cup brown sugar, packed
  • ½ teaspoon ground nutmeg
  • 3 tablespoons apple cider vinegar
  • 5 sprigs fresh thyme
  • ½ teaspoon kosher salt
  • juice of 1 lemon
  • 1 tablespoon cornstarch
  • zest of 1 lemon
  • sourdough baguette, sliced into 18 pieces on bias (a multigrain baguette also tastes excellent)
  • 2 cups ricotta cheese, fresh
  • 1/3 cup honey
  • ½ cup salted and toasted pecan halves, finely chopped (if pre-toasted unavailable, dry roast in a skillet over low-medium heat for 10 minutes!)

Heat a tablespoon or so of olive oil in skillet over low-medium heat. Add onion and cook until fragrant and caramelized. Add blueberries, ginger, thyme, apple cider vinegar, brown sugar, nutmeg and kosher salt. Stir while the chutney simmers and thickens for about 12 minutes. Add cornstarch and continue to stir for about 5 more minutes. Remove the skillet from the heat and add lemon juice to chutney. Set aside.

Arrange slices of sourdough baguette on grill pan. Brush the surface of each slice with olive oil. Bake/grill for about 8 minutes at 400 degrees (or until toasted slightly. Keep an eye on the bread so it doesn’t burn).

Carefully mix lemon zest into ricotta in small bowl.

Drizzle honey over the surface of each toasted baguette slice. Sprinkle toasted pecans over the honey on the surface of each slice. Spoon ricotta mixture onto each slice over honey and nuts. Lastly, spoon blueberry chutney over the ricotta on each slice and arrange baguettes on serving dish for a delicious appetizer to pair with Ecco Domani Pinot Grigio.
