Cheesy Pumpkin & Kale Baked Pasta  Back to Recipes

Weeknights are delicious with this easy (and cheesy) Pumpkin & Kale Baked Pasta one-dish dinner. Serves 4-6.



Ingredients

• 16 ounce-box rotini pasta
• 1 ½ cup 2% milk
• 1 ½ cup heavy cream
• salt and pepper, to taste
• 3 tablespoons all purpose flour
• ¼ cup butter, softened
• 1 tablespoon stoneground Dijon mustard
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika
• ½ tablespoon dried Italian seasoning blend (oregano, parsley)
• ¾ cup pumpkin puree, canned
• ¾ cup parmesan cheese, freshly grated
• 2 cups sharp white cheddar cheese, freshly grated
• ½ cup fontina cheese, freshly grated
• ½ breadcrumbs (use panko for extra crispy topping)
• 1 ½ cup kale, ribbed and roughly chopped


Directions

Preheat oven to 375 degrees.
Cook pasta according to box directions, except remove from heat and drain about 3-5 minutes before fully cooked. Pasta will finish cooking in oven. Set noodles aside.
In a large saucepan over medium heat, melt butter. Whisk flour into butter slowly, creating a rue. Slowly add milk and heavy cream to rue stirring consistently, bringing mixture to a simmer. Let cook, stirring often, for about 6-8 minutes. It will thicken.
Add salt, pepper, garlic powder, smoked paprika, stoneground Dijon and Italian seasoning blend. Stir until mixed. Add pumpkin puree and all of fontina and sharp cheddar cheeses and half of the parmesan. Reserve remaining half parmesan for topping. Stir until cheese melts and sauce is thick, creamy and smooth. Remove saucepan from heat and stir in the kale letting residual heat wilt kale.
Put pasta in a large mixing bowl and pour sauce over pasta and toss until well-coated.
Grease casserole dish or spray with nonstick cooking spray. Pour pasta into dish and top with breadcrumbs and remaining parmesan cheese. Top breadcrumbs and parmesan with a few dabs of butter if desired and bake covered for 15 minutes. Remove lid and bake for another 10-15 minutes until bubbly and lightly browned.
