Chicken Parmesan Sliders  Back to Recipes

Makes 12 sliders.

  • 12 mini ciabatta rolls (find in bakery; can substitute any bakery rolls)
  • 6 chicken breasts
  • 1 cup Italian bread crumbs
  • 1 teaspoon garlic salt
  • ½ cup Parmesan cheese, shredded
  • 1 jar tomato sauce (your favorite kind)
  • 1/3 cup fresh parsley, chopped
  • Black pepper, to taste
  • 6 tablespoons butter, softened to room temperature
  • 2 cups mozzarella cheese, grated


Preheat the oven to 375 degrees. In a shallow mixing bowl, combine bread crumbs, garlic salt and Parmesan cheese. Rinse chicken breasts and pat dry with paper towels. Prepare nonstick baking sheet or broiler pan by spraying with nonstick spray.

Cut chicken breasts in half or thirds (match the size of the chicken to the size of the bun). Roll each chicken portion in bread crumb mixture and place evenly spread apart on baking pan. Bake chicken for about 15 minutes or until cooked through. Remove chicken from oven and hot pan and set aside.

Cut mini rolls in half like hamburger buns. Spread softened butter on the inside of each bun in even thin layer. Place cooked chicken on each bun. Spoon about 2 tablespoons of sauce over each chicken portion on buns. Sprinkle freshly cracked black pepper on each slider. Sprinkle shredded mozzarella over sauce on each slider. Put the ciabatta bun tops on each slider and bake for an additional 5-10 minutes or until cheese has melted. Remove and serve at your next viewing party.
