Crunchy Kale Cabbage Carrot Slaw  Back to Recipes

Ecco Domani Pinot Grigio’s light and crisp flavors pair perfectly with Crunchy Kale Cabbage Carrot Slaw, made with a sweet + tangy vinaigrette. Serves 6-8.



Ingredients
  • 1 cup shredded carrots
  • 1 cup seeded and finely chopped cucumber
  • 6 cups kale, roughly chopped
  • 2 cups purple (red) cabbage, roughly chopped
  • juice and zest of ½ orange
  • 1 tablespoon honey
  • black pepper and salt, to taste
  • ¼ cup shelled raw sunflower seeds
  • 3 tablespoons red wine vinegar
  • 1/3 cup extra-virgin olive oil

 


Directions

In a small bowl, combine olive oil, vinegar, honey, orange zest, orange juice, salt and pepper. Whisk together until mixed.

In a large bowl, combine remaining ingredients. Toss until well combined. Pour dressing from small bowl over slaw in large bowl and toss until coated with dressing.

Refrigerate for at least 30 minutes before packing and serving at your picnic with Ecco Domani wine.
