Herbed Cauliflower Mash  Back to Recipes

You will want seconds. Herbed Cauliflower Mash means more goodness, less potatoes. Serves 4.

  • ¼ cup butter
  • 1 head cauliflower, divided into florets
  • 1 whole bulb of garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon fresh tarragon, minced
  • 1 teaspoon fresh flat-leaf parsley, minced
  • 1 teaspoon fresh basil, finely chopped


Preheat oven to 400 degrees.

Cut 1/4 inch off the top of the bulb of garlic. Drizzle 1 teaspoon of olive oil over exposed garlic cloves. Loosely wrap garlic bulb in aluminum foil and roast in oven for 50 minutes.

Meanwhile, steam cauliflower until very tender when pierced with fork.

Transfer cauliflower to food processor and pulse until almost completely smooth. Add herbs to mixture and pulse until completely smooth. Transfer mash to serving bowl and add salt and pepper to taste.

Finish with a teaspoon of olive oil swirled into the top of the mash and garnish with extra parsley, if desired. (Note: You can also stir shredded cheese into the hot mash if you prefer!)
