Maple Roasted Rainbow Carrots  Back to Recipes

A Thanksgiving side as delicious as it is photogenic: Maple Roasted Rainbow Carrots. Serves 6.

  • 2 pounds rainbow carrots, peeled (keep leafy green tops on)
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon honey
  • 2 teaspoons ground coriander
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper, coarsely ground
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon ground cinnamon



Preheat oven to 450 degrees.

Grease a baking pan with sides. Place peeled carrots on pan and drizzle with olive oil, maple syrup and honey. Sprinkle with coriander, salt, pepper and cinnamon. Use your hands to toss carrots until evenly coated in ingredients.

Roast carrots for 10-15 minutes. Remove from oven and flip carrots. Sprinkle with thyme and rosemary then roast for another 15 minutes. Carrots are done then tender and caramelized.

Serve arranged on a large plate with Ecco Domani Pinot Grigio for Friendsgiving!
