Pita Points And Golden Beet Hummus  Back to Recipes

Makes 3 cups

  • Pita, cut into triangles and toasted
  • 1 cup roasted golden beets (we recommend wearing gloves to protect your hands from turning yellow!)
  • 1 8-oz. can garbanzo beans, drained and rinsed
  • 1 lemon, juiced and zested
  • 2 tablespoons garlic, minced
  • Salt and pepper, to taste
  • Fresh mint, chopped for garnish
  • 2 tablespoons sunflower seeds 


Preheat oven to 400 degrees for roasting beets. Meanwhile, scrub beets to clean them. Wrap each beet completely in tinfoil and place on baking pan. Roast beets in preheated oven for about 25 minutes. They are done when a fork or butter knife easily inserts into the beet. When done, remove from oven and unwrap beets from foil. Let the beets cool for about 10 minutes until you can handle them.

Peel the skin off of the beets (we recommend wearing gloves because beets will dye your hands yellow!) with your hands. Cut beets in half or quarters and put in the food processor. Add the garbanzo beans, juice of 1 lemon, zest of 1 lemon and garlic to food processor. Pulse the food processor until the mixture is smooth. If the hummus is too thick, add a tablespoon of water at a time until it is to your desired thickness. Add salt and pepper to your taste and pulse.

Remove hummus from processor and put into your serving dish. Sprinkle the top with sunflower seeds and mint. Serve with pita points and Ecco Domani Pinot Grigio!
