Zucchini, Mozzarella and Tomato Salad  Back to Recipes

Veggies gets an Italian upgrade with our recipe for Zucchini, Mozzarella and Tomato Salad that pairs effortlessly with Ecco Domani Pinot Grigio. Serves 8.

  • 2-3 zucchinis, spiralizez into “noodles” or finely julienned
  • 3 ½ cups spinach and baby spinach leaves
  • 1 cup fresh basil leaves
  • 1 ½ pint fresh cherry tomatoes, sliced in halves
  • 8-10 ounces buffalo mozzarella, pulled into bite-size pieces

Simple Vinaigrette Dressing:

  • 1 Part olive oil
  • 1 Part balsamic vinegar
  • Freshly squeezed lemon juice
  • Salt and pepper 


Combine all ingredients in large salad bowl and toss very gently, careful not to bruise the fresh tomatoes.

Add dressing to your liking and toss gently, to evenly coat.

Serve with Ecco Domani Pinot Grigio.
