Using a mandolin, slice cucumbers lengthwise into thin oblong slices (Need to be thin enough to roll).Rest cucumber slices on paper towels to absorb excess liquid while you make the feta mixture.

In a small bowl, combine feta, Greek yogurt, olives, red pepper flakes, red bell pepper, dill and lemon juice. Spoon a heaping teaspoonful of filling onto the end of each cucumber slice and roll up. Secure each with a prepared toothpick (optional). Arrange on a serving plate with a bottle of Ecco Domani wine.

In a medium bowl, combine cream cheese, chopped dill, maple syrup, pepper, paprika and lemon zest.

Cut gravlax into pieces the size of the crackers. Spread each cracker with cream cheese mixture. Top with a piece of gravlax and a garnish sprig of dill. Arrange crackers on plate for serving. Put the leftover cream cheese mixture in a serving dish with extra crackers for guests who prefer fishless crackers. Serve with Ecco Domani Pinot Grigio.

Add olive oil to skillet pan over medium heat. Add Arborio rice to olive oil and stir to toast the rice for a few minutes. Begin adding stock to rice in heated pan a little at a time, allowing the rice to absorb the warm stock. Once all of the stock has been added, cook until all liquid is absorbed for 20-30 minutes, stirring regularly.

Meanwhile, prepare pesto by adding basil, pine nuts and garlic to food processor. Pulse several times, then begin adding in the olive oil a tablespoon at a time while continuing to pulse until smooth.

Preheat the oven to 325 degrees.

In a medium mixing bowl, grate the Parmesan, add the flour, add the thyme, add the rosemary, add the butter. Mix ingredients until well combined. Grate the pepper into the mixture, add the garlic salt and half of the sea salt.  Mix gently until combined. (Be careful not to overmix).

Preheat oven to 300 degrees.

In a large mixing bowl, combine fruit and ½ of the orange juice. In a medium bowl, combine melted butter, sugar and spices. Add honey and mix.Add contents of medium bowl to fruit in large bowl and stir until fruit is coated.

Spread fruit mixture evenly into a 9x12-inch baking dish. Bake for 50 minutes. Add pistachios, walnuts and coconut flakes evenly over fruit. Bake for another 10 minutes.

Remove from the oven and let cool for 10 minutes before serving with ice cream and Ecco Domani Pinot Grigio.

Preheat oven to 350 degrees. In a mixing bowl, combine crushed tomatoes, herbs (fresh and dry), salt, pepper, garlic, hot sauce, olive oil and vinegar. Spread the mixture into the bottom of a 9x12 glass baking pan. Arrange the veggies in rows, with stacks of alternating veggies in a uniform pattern. Line the rows of vegetables in the pan so there are about 3 rows of veggies filling the baking pan. Sprinkle the breadcrumbs over the top of the vegetables. Sprinkle the Parmesan cheese over the top of the breadcrumbs.

Preheat oven to 350 degrees.

Finely chop black and green olives and put into a medium mixing  bowl. Add artichokes to bowl. Gently stir to combine. Add garlic, mayonnaise and butter to the bowl. Stir until well combined. Add both cheeses to bowl and stir until completely combined.

Cut the French loaf in half lengthwise. Divide the mixture in two portions and spread a thick layer on each open face of the loaf of bread.

Preheat oven to 400 degrees. Cut baguette lengthwise into two halves. Place bread face down on oven grates and bake for about 5-10 minutes until it is lightly toasted.

Peel each clove of garlic and cut in half. Rub the garlic across the faces of the toasted baguette.

Clean mushrooms with dry cloth. Cut mushrooms into slices of uniform thickness. Cook mushrooms in a dry pan on medium heat. Add the onions and stir. Once the onions and mushrooms are almost done, add the white wine and cook to completion.

Combine black-eyed peas and white beans in a large mixing bowl. Add tomatoes, red onion, green pepper and jalapeño to bowl. Stir.

Combine vinegar, sugar, zest, salt and pepper in a small bowl and stir until sugar dissolves. Add the oil and whisk. Pour liquid mixture over beans in the large bowl. Add the cilantro and toss until well-combined. Refrigerate for at least 2 hours to develop full flavor.

Serve with corn chips for New Year’s entertaining!
