Santorini Sunset Salad Recipe

Serves 1


  • 1 (5 oz.) pkg. Spring Salad Mix
  • 1 1/2 cups garlic melba toast crackers, slightly broken
  • 1 yellow, red or green pepper, seeded and cubed
  • 1 large cucumber, peeled and sliced
  • 1 cup Kalamata olives, drained
  • 1/2 cup minced onion
  • 1/4 cup toasted pine nuts
  • Salad dressing to taste

Optional for garnish and more intense flavor:

  • Fresh chopped Italian parsley
  • Fresh chopped oregano leaves


Place salad mix in a large bowl; toss with parsley and oregano. Add remaining ingredients, tossing with desired amount of salad dressing. If desired, garnish with Italian parsley and oregano. Serve immediately

Pairs well with Ecco Domani Merlot.
