Use a melon baller tool to make 20 melon balls from the cantaloupe. Set aside 20 mini mozzarella balls. Cut the avocado into 20 chunks uniform in size and about the same size as the melon balls and mozzarella balls.

Make the skewers by piercing one melon ball, one avocado chunk and one mozzarella ball per toothpick. Arrange finished skewers on serving plate. Sprinkle with salt and pepper to taste. Serve with Ecco Domani Pinot Grigio.

Preheat the oven to 375 degrees. Roll puff pastry into an 8” square. Cut sheets into four 4-inch squares.

In a bowl, whisk the large egg and brush the egg wash over the puff pastry. Then, sprinkle each square with the sugar (distributing 1/2 tablespoon evenly among the 20 pastry rounds.) Bake the pastry for 10-15 minutes until puff pastry is puffed up and golden brown. Dot each square with about 4 teaspoons of goat cheese. It should soften from the residual heat. Once it does, gently spread it to cover the squares.

Combine all ingredients for Teriyaki sauce in a saucepan over medium heat and stir until bubbly and thick, about 15 minutes. Remove from heat and let cool to room temperature.

Rinse chicken breasts, pat dry and cut into ½ inch cubes.

Reserve half of the Teriyaki sauce and set aside. Pour the other half of the Teriyaki sauce in a glass dish with chicken cubes, coat chicken in sauce and cover. Marinate the chicken in the refrigerator overnight.

Heat and oil the grill. Sprinkle steak with chili powder and grill to desired wellness. Remove steak from grill and set aside to rest.

Once rested, slice steak against grain, into thin strips and divide evenly among corn tortilla shells. Divide red onion, avocado slices, queso fresco and cilantro evenly among tacos. Lightly squeeze lime juice over finished tacos and serve with your favorite guacamole and salsa.

Using a mandolin, slice cucumbers lengthwise into thin oblong slices (Need to be thin enough to roll).Rest cucumber slices on paper towels to absorb excess liquid while you make the feta mixture.

In a small bowl, combine feta, Greek yogurt, olives, red pepper flakes, red bell pepper, dill and lemon juice. Spoon a heaping teaspoonful of filling onto the end of each cucumber slice and roll up. Secure each with a prepared toothpick (optional). Arrange on a serving plate with a bottle of Ecco Domani wine.

In a medium bowl, combine cream cheese, chopped dill, maple syrup, pepper, paprika and lemon zest.

Cut gravlax into pieces the size of the crackers. Spread each cracker with cream cheese mixture. Top with a piece of gravlax and a garnish sprig of dill. Arrange crackers on plate for serving. Put the leftover cream cheese mixture in a serving dish with extra crackers for guests who prefer fishless crackers. Serve with Ecco Domani Pinot Grigio.

Add olive oil to skillet pan over medium heat. Add Arborio rice to olive oil and stir to toast the rice for a few minutes. Begin adding stock to rice in heated pan a little at a time, allowing the rice to absorb the warm stock. Once all of the stock has been added, cook until all liquid is absorbed for 20-30 minutes, stirring regularly.

Meanwhile, prepare pesto by adding basil, pine nuts and garlic to food processor. Pulse several times, then begin adding in the olive oil a tablespoon at a time while continuing to pulse until smooth.

Wash butternut squash, peel and chop into large cubes.

Bring squash to a boil in a large pot with water. Cover pot and cook until squash is tender when pierced with a fork. Drain the squash and put cooked squash cubes in food processor. Add milk and cream to squash and pulse the food processor until just smooth. Remove sauce mixture from food processor and put back into saucepan over medium heat.

Meanwhile, begin cooking the tortellini pasta according to package instructions.

Preheat the oven to 325 degrees.

In a medium mixing bowl, grate the Parmesan, add the flour, add the thyme, add the rosemary, add the butter. Mix ingredients until well combined. Grate the pepper into the mixture, add the garlic salt and half of the sea salt.  Mix gently until combined. (Be careful not to overmix).
