Preheat oven to 300 degrees.

In a large mixing bowl, combine fruit and ½ of the orange juice. In a medium bowl, combine melted butter, sugar and spices. Add honey and mix.Add contents of medium bowl to fruit in large bowl and stir until fruit is coated.

Spread fruit mixture evenly into a 9x12-inch baking dish. Bake for 50 minutes. Add pistachios, walnuts and coconut flakes evenly over fruit. Bake for another 10 minutes.

Remove from the oven and let cool for 10 minutes before serving with ice cream and Ecco Domani Pinot Grigio.

Preheat oven to 400 degrees. Spray foil-lined baking sheet with nonstick cooking spray.

In a mixing bowl, combine butter, bread crumbs, onions, dill, garlic and basil.

Place salmon fillets across pan (skin side down) and top each with ¼ of the bread crumbs mixture. Bake salmon for 10 minutes until flakes easily with a fork.

For the sauce:

In a medium saucepam, boil wine and green onions until reduced and most  liquid has evaporated. Add heavy cream and reduce to one cup. Add dill and Dijon and simmer a few minutes.

Preheat oven to 400 degrees. Add olive oil to coat the bottom of a ceramic baking pan. Add onion, bell pepper, salt and pepper to the pan and toss in oil. Cook vegetables in oven for 15 minutes. Add garlic to vegetables in the pan and stir then cook for 5 more minutes.

Meanwhile, cook quinoa according to package – except replace water with chicken stock. When quinoa is done, add drained black beans and olives to saucepan and toss with quinoa. Squeeze the juice of 1 lime over quinoa and black bean mixture.

Preheat oven to 350 degrees. In a mixing bowl, combine crushed tomatoes, herbs (fresh and dry), salt, pepper, garlic, hot sauce, olive oil and vinegar. Spread the mixture into the bottom of a 9x12 glass baking pan. Arrange the veggies in rows, with stacks of alternating veggies in a uniform pattern. Line the rows of vegetables in the pan so there are about 3 rows of veggies filling the baking pan. Sprinkle the breadcrumbs over the top of the vegetables. Sprinkle the Parmesan cheese over the top of the breadcrumbs.

Preheat oven to 400 degrees. In a baking pan, toss all vegetables in half of the olive oil with Italian herbs, ½ salt and ½ pepper. When veggies are tender, remove from oven and set aside.

In large pot, bring salted water to boil and cook penne pasta according to package, except drain and stop cooking when the pasta is still partially hard (uncooked). It will finish cooking in the oven.

In a large mixing bowl, combine pasta, vegetables, marinara sauce, remaining salt and pepper, cheeses (leave ½ parmesan for topping at the very end), and sun-dried tomatoes.

Preheat oven to 350 degrees.

Finely chop black and green olives and put into a medium mixing  bowl. Add artichokes to bowl. Gently stir to combine. Add garlic, mayonnaise and butter to the bowl. Stir until well combined. Add both cheeses to bowl and stir until completely combined.

Cut the French loaf in half lengthwise. Divide the mixture in two portions and spread a thick layer on each open face of the loaf of bread.

Preheat oven to 400 degrees. Cut baguette lengthwise into two halves. Place bread face down on oven grates and bake for about 5-10 minutes until it is lightly toasted.

Peel each clove of garlic and cut in half. Rub the garlic across the faces of the toasted baguette.

Clean mushrooms with dry cloth. Cut mushrooms into slices of uniform thickness. Cook mushrooms in a dry pan on medium heat. Add the onions and stir. Once the onions and mushrooms are almost done, add the white wine and cook to completion.

Preheat oven to 400 degrees for roasting beets. Meanwhile, scrub beets to clean them. Wrap each beet completely in tinfoil and place on baking pan. Roast beets in preheated oven for about 25 minutes. They are done when a fork or butter knife easily inserts into the beet. When done, remove from oven and unwrap beets from foil. Let the beets cool for about 10 minutes until you can handle them.

Preheat the oven to 375 degrees. In a shallow mixing bowl, combine bread crumbs, garlic salt and Parmesan cheese. Rinse chicken breasts and pat dry with paper towels. Prepare nonstick baking sheet or broiler pan by spraying with nonstick spray.

Cut chicken breasts in half or thirds (match the size of the chicken to the size of the bun). Roll each chicken portion in bread crumb mixture and place evenly spread apart on baking pan. Bake chicken for about 15 minutes or until cooked through. Remove chicken from oven and hot pan and set aside.

Combine black-eyed peas and white beans in a large mixing bowl. Add tomatoes, red onion, green pepper and jalapeño to bowl. Stir.

Combine vinegar, sugar, zest, salt and pepper in a small bowl and stir until sugar dissolves. Add the oil and whisk. Pour liquid mixture over beans in the large bowl. Add the cilantro and toss until well-combined. Refrigerate for at least 2 hours to develop full flavor.

Serve with corn chips for New Year’s entertaining!
