LEMON BROCCOLI PASTA

Ingredients:
• 1 medium shallot
• 2 cloves garlic
• Half a box of pasta
• 1 ¾ cups of water
• 1 ½ cups or vegetable or chicken broth
• 1 Tbsp lemon zest
• Sprinkle of salt and pepper
• 1 package/crown of frozen or fresh broccoli
• Graza Drizzle Olive Oil for finishing
• Lemon juice and parmesan to top
Directions:
1. In a large saucepan over medium heat, add the shallot and sauté for about 2 minutes until soft.
2. Add the garlic and sauté for another 30 seconds or until you can smell the garlic.
3. Next, add your pasta, water, broth, lemon zest, salt, and pepper. If using fresh broccoli, add to the pot at this time. Cover the pot and bring to a boil over high heat.
4. Once boiling, uncover the pot and reduce to a medium heat and cook for the next 10 minutes, stirring frequently.
5. Add your frozen broccoli (if using) and continue stirring. Cook the broccoli for 2 to 3 minutes – until heated through.
6. Add a little lemon juice and parmesan and drizzle with Graza Olive Oil for an epic finishing touch.
7. Serve and enjoy!
