LEMON BROCCOLI PASTA

Ingredients:

• 1 medium shallot​

• 2 cloves garlic​

• Half a box of pasta​

• 1 ¾ cups of water​

• 1 ½ cups or vegetable or chicken broth​

• 1 Tbsp lemon zest​

• Sprinkle of salt and pepper​

• 1 package/crown of frozen or fresh broccoli

• Graza Drizzle Olive Oil for finishing ​

• Lemon juice and parmesan to top

Directions:

1. In a large saucepan over medium heat, add the shallot and sauté for about 2 minutes until soft​.

2. Add the garlic and sauté for another 30 seconds or until you can smell the garlic​.

3. Next, add your pasta, water, broth, lemon zest, salt, and pepper. If using fresh broccoli, add to the pot at this time. Cover the pot and bring to a boil over high heat.​

4. Once boiling, uncover the pot and reduce to a medium heat and cook for the next 10 minutes, stirring frequently. ​

5. Add your frozen broccoli (if using) and continue stirring. Cook the broccoli for 2 to 3 minutes – until heated through.​

6. Add a little lemon juice and parmesan and drizzle with Graza Olive Oil for an epic finishing touch​.

7. Serve and enjoy!
