SALMON SKEWERS

Ingredients:
• 1.5 lbs salmon filet
• 2 Tbsp Graza Sizzle Olive Oil
• 3-4 lemons (1 for juice, 2-3 for lemon slices)
• 4 garlic cloves minced
• 2 tsp Dijon mustard
• ½ tsp sea salt
• ¼ tsp ground black pepper
• 2 Tbsp fresh parsley chopped
• 1 Tbsp fresh dill chopped
Directions:
1. Combine the Graza Sizzle Olive Oil for Cooking, lemon juice, garlic, mustard, salt, pepper, parsley, and dill for the marinade in a large bowl and whisk them together.
2. Cut your salmon into roughly 1 in pieces.
3. Add the cubed salmon into the marinade and gently toss together until coated. Be sure not to over toss the salmon and cause it to fall apart.
4. Thread 1-2 salmon pieces onto a skewer and then a lemon slice. Keep repeating until all the salmon and lemon are skewered.
5. Preheat the grill to medium-high heat and grease the grates.
6. Add the skewers to the hot grill in a single layer and grill for about 3 to 4 minutes, then repeat on the other side until cooked through.
7. Remove the skewers from the grill and serve with a salad or over rice. Enjoy!
